One of he hardest parts of Whole30 for me is finding recipes that I’m excited about eating. Most of my favorite foods have pasta and cheese so it’s hard to find ones I love. Here are a few recipes that I liked enough to do them after Whole30 is over.
Marinated Onions

- Thinly slice the red onion and put in a shallow dish (I used a round cake pan because it was clean).
- Mix together the olive oil, vinegar, and oregano.
- Pour the mixture over the onions and toss to coat. They should be as submerged as possible.
- Let sit for at least 12 hours.
Sweet Potato Chicken Nuggets

- Preheat oven to 400 F and line a baking sheet (or three) with lightly oiled parchment paper.
- Combine everything in a big bowl and mix until fully combined.
- Begin rolling the mix into small 1 inch balls (like you do with cookies) and flatten them.
- Place on the baking sheets (they don’t expand like cookies so you don’t have to space them out as much) and bake for 30 minutes, flipping halfway. They’ll be cooked through and slightly crispy on the edges.
- You can eat them with sauces but honestly I preferred them on their own!
Loaded burgers are also a great and pretty easy Whole30 option that I really like. Here are two that I love and that I made for my family (non-Whole30 with buns) and they loved! You can eat them with a knife and fork or put the burgers on lettuce buns.
Whole30 Garlic Bacon Avocado Burger
