A few summers ago I took a different weekend trip to New York City and had this drink for the first time. I’ve wanted to re-create it since then but was never sure if it was the setting that made the drink seem so great or if the drink was also great on its own. Apparently the drink can stand on its own.

- Get a big wine glass (aka a red wine glass), fill it with champagne, and stick the popsicle upsidedown into the champagne.

Obviously I didn’t need to write out the steps for you but I feel so much more ~professional~ when I line it up as if it’s some serious recipe.
I first had this drink on a rooftop bar in New York that looked out over the city and the water so you can understand why I was confused about whether the drink was actually any good. It’s the perfect way to spice things up during the summer (and to disguise the exceptionally cheap prosecco you bought at Trader Joe’s). Plus there’s something that’s just so fun about having a popsicle in a new, adult way!
I’d aim to get one of the real fruit-type popsicles so you don’t end up with just a sugary mess inside your glass, but you do you. Experiment with pairings! A classic is pink champagne with a strawberry pospicle, but mix it up–try a citrus popsicle with prosecco! I love watching the wine slowly change colors and flavors as the popsicle melts into it.
