This salad has been a favorite of mine since I first heard about it in the GNI newsletter last summer (I think it was last summer). It’s like all the best flavors of summer in one spot.
Ingredients
1/2 red onion, sliced
4 peaches, pitted and sliced
2 big heirloom tomatoes, diced
1 container of baby mozzarella balls (like the size you get at Trader Joe’s but not the spice marinated ones), cut in half
1-2 handfuls of basil leaves, torn
Salt and pepper
Dressing
2 tablespoons red wine vinegar
1 lemon, juiced
1/4 cup olive oil
Salt and pepper
Recipe
- Whisk together the dressing in a small bowl.
- Throw everything else in a large bowl, add dressing, toss to coat.
This salad smells as good as it tastes. I was skeptical about the whole adding fruit to a perfectly good caprese salad thing but it turned out to be amazing. I also love to top it with a bit of balsamic vinegar (as I do with regular caprese salad), but you absolutely don’t have to–it’s great without! Pair this with your favorite summer drink (I’ll be sharing more recipes as the summer progresses) and enjoy!
