For a while Brandon was on a quest to come up with the best homemade (not from a mix) waffle recipe. We have a Belgian waffle maker but I feel pretty confident this will work on regular waffle makers too.
Ingredients
2 to 2 1/2 cups flour (adjust based on need)
2 to 4 eggs
3 tablespoons sugar
1/2 tablespoon salt
1 heaping tablespoon of baking powder
3 teaspoons vanilla

1/2 cup vegetable or olive oil
2 cups milk (we use almond milk because I hate milk)

Recipe
- Mix dry ingredients in a bowl.
- Add in wet ingredients.
- Adjust eggs/flour as needed.
- Whisk vigorously (per Brandon).
- Pour one cup of batter into waffle maker. Let cook for as long as your particular waffle maker requires.
I like this recipe because I never remember to buy waffle or pancake mix in the store and these are all ingredients I already have around the house for baking. Brandon makes these waffles almost every weekend and they’re great with syrup or almond butter or jam!
