Okay before anyone shouts at me–I know these appetizers are not Whole30 compliant. BUT I made them for March wine club and they were so easy and such a huge hit that I had to share them. Note that this is two recipes for the price of one (well, let’s be real everything you’re getting here is fo’ free so this is just an extra freebie for you).
Caprese Skewers
Ingredients
Mozzarella balls (the tiny ones that come marinated or in salt water, not the big ball)
Small tomatoes (I like the heirloom ones because they’re more colorful but cherry tomatoes work too)
Basil
Balsamic vinegar
Mini skewers (bigger than toothpicks but only by a little)
Recipe
- Cut your mozzarella balls and tomatoes in half.
- Assemble the skewers: half a mozzarella ball, a piece of basil, half a tomato and repeat.
- The skewers end up having two little circles on them that are half cheese and half tomato.
- Place on a plate and drizzle with balsamic vinegar (*Ina Garten voice* I had apple balsamic vinegar and it was delicious but you can use regular I guess).
Blackberry Cucumber Skewers
Ingredients
Mozzarella balls (as above)
Blackberries
Cucumber
Basil
Balsamic vinegar
Mini skewers
Recipe
- Cut your mozzarella balls in half and cut your cucumbers into rounds (just cut them the normal way–I left on the skin because it doesn’t bother me but you do you).
- Assemble the skewers: half a mozzarella ball, a piece of basil, cucumber slice, blackberry.
- Place on a plate and drizzle with balsamic vinegar.
As you can see these are ridiculously easy to make and everyone loved them. They’re a great party snack because they don’t require any utensils or even really any napkins. Also the perfect summer appetizer because they’re great warm (like by the sunlight) or chilled!
