This is one of my favorite easy meals to make for lunches when I meal prep on Sunday. As always, recipe at the top:

- Make your pasta. SALT YOUR WATER PLEASE.
- Thinly slice your sausages so you have flat circles of sausage.
- Heat olive oil in a pan. Add in your smashed garlic and sausage slices.
- Brown the sausage. (Most chicken sausage–at least the ones I buy–are pre-cooked, so you’re just browning them to enhance the flavor.)
- Put a few (3-4) spoonfuls of pesto in a large bowl. Add in the cooked pasta and toss to coat.
- Add in the cooked sausage, sun dried tomatoes, and red pepper flakes (to taste). Toss again.
- Separate into tupperwares for lunches. Usually makes 6 servings.
This is a super quick and very tasty recipe to meal prep for lunches. Pasta is so easy to meal prep since it’s great to make in big batches, but this is even easier because the rotini reheats extra well. I usually buy the chicken and apple sausages from the grocery store (they’re super mild but extremely yummy) so I add the red pepper flakes as an extra kick. If I have any leftover marinated artichoke hearts I’ll chop them up and add them into the bowl as well, but it’s not part of my usual recipe.
The main reason why I love this recipe is because I have all of these things in my pantry and refrigerator anyway so it’s easy to throw together on a Sunday evening as I get ready for the week. It also smells so good the rest of your office will think you’re a much fancier cook than you actually are.
