It seems like everyone is baking lately. You all probably know that I’ve spent some of the past few years learning how to bake (if you knew me before law school you know that I absolutely could not bake worth my life) and now I’m pretty comfortable making bread and cookies and other things that aren’t super fancy. It’s been a fun project that is also delicious and even a little relaxing. So I’m not really surprised that more people have turned to baking now, especially because you end up with something delicious to eat for the rest of the week. If you’re looking for some new recipes to bake, here are a few that I’ve made in the past few weeks (I’ll make notes where I’ve made substitutions out of necessity so you know those work).
My easy no-knead bread recipe. Pretty much a no-brainer since I make this normally, but it’s been extra nice to be able to make my own bread since we’re grocery shopping for two weeks at a time and this means I don’t have to load up on bread since I can make my own.
Focaccia bread. This seems like a fancy bread but it requires very few ingredients and you can make it in less than three hours so that’s a win. I don’t have fresh rosemary in my pantry (and I don’t have a garden) so I left that off. This bread is great topped with a fried egg for breakfast or as a bread to have with a cheese plate or just as a snack. Way more versatile than you’d expect.
Chocolate chip cookies. I mean, of course. Carly’s recipe (linked in my post) is my go-to easy cookie recipe so those have been on repeat here.
BA’s best snickerdoodles. I love snickerdoodles. They’re super fun to make with the rolling the dough into spheres and rolling them in cinnamon sugar. And Bon Appetit always has great recipes. Substitute 1 tablespoon of vanilla extract if you’re a peasant like me and don’t have full vanilla beans.
Smitten Kitchen ultimate zucchini bread. I bought too many zucchinis for a different recipe (chocolate zucchini muffins from Love and Lemons) so I needed to figure out what to do with them and made this yesterday. Wow. You literally mix this in one bowl with a fork. And she TELLS YOU to store it uncovered in the pan. Which I did last night and it worked perfectly. So if you’re looking for a super low maintenance recipe that tastes delicious, look no further.
