Today’s recipe is coming at you because I threw this together the other night and it was so yummy I have to write it down so I can make it again!
Ingredients
1 box Lemon Basil Gemelli (or any other pasta–I just loved the flavor of this)
Lemon olive oil
2 chicken sausages
Garlic
Handful of arugula
1/2 cup grated parmesan cheese
2 green onions
Salt and pepper
Recipe
- Chop up your sausage into thin-ish circles. Chop your green onions. Set both aside.
- Make your pasta according to the instructions. Remember to salt your pasta water!!
- Heat up the lemon olive oil in a pan. Add in your sausage to crisp up (the chicken sausages I buy are pre-cooked so you’re really heating them up and giving them a nice crisp). Throw in some garlic to the pan. Salt and pepper while you go as necessary.
- Once the pasta is cooked, drain it (reserve some of the pasta water) and add it to the pan. Add the cheese and toss to coat, adding pasta water as necessary (aka add it to make your cheese stick to your pasta if it isn’t). Add in your arugula and stir until all mixed together and the greens are wilted.
- Put that delicious pasta into bowls and top with green onions (and more salt and pepper and oil if you want).
A super easy and quick recipe and the flavors got me right into the spring/summer mood! I had been looking for a good recipe to use this beautiful flavored pasta with that wouldn’t overwhelm it and this really hit the mark. I had given B a few different flavors from Scratch Pasta Co. for Christmas and OMG highly recommend them all. They’re super flavorful without being too aggressive which is really my sweet spot for pasta.
