Last year I learned how to make popcorn on the stovetop and it changed my life. I promise it’s super easy–I was intimidated at first but it’s so worth it.
Ingredients
Popcorn kernels
Peanut or canola oil
Salt (other topping ideas below)
- Pour about a tablespoon of oil into a pot with a lid–you’re just trying to lightly coat the bottom of the pot. I use either canola oil or peanut oil depending on what I’m going to top my finished popcorn with. Add in 3 kernels and put the lid on. Turn the burner on to medium and wait.
- While you wait for your 3 kernels to pop, measure out 1/3 to 1/2 cup of popcorn kernels. Once those first kernels have popped you can pour in the rest of your kernels and put the lid back on.
- Let the popcorn pop, shaking the pot occasionally to make sure nothing is sticking to the bottom. Proceed like this until there’s 1 second between any remaining pops–you don’t want to burn anything!
- Turn off the heat and drizzle a tiny bit of the oil you used on top of the popcorn and immediately top with salt (or other desired topping). Pour into a bowl and add more of your toppings and stir. (The key is to do your seasonings while the popcorn is still hot so that they stick better.)
- Enjoy!
Topping ideas
- My favorite topping right now is 1 tablespoon of nutritional yeast, 1 teaspoon of Follow Your Gut, sea salt, fresh ground pepper, and a pinch of rosemary. This is like a salty, cheesy, savory type of popcorn.
- Salt, fresh ground pepper, Sriracha
- Salt and dark chocolate chips
- Trader Joe’s Everything but the Elote seasoning
- Literally anything your heart (and tummy) desires!
Confession: popcorn is my all time favorite snack. I used to eat like a bag of microwave popcorn every single day. Sometimes for a snack and sometimes for a meal. An embarrassing number of times in law school my dinner was microwave popcorn and wine. (Don’t judge me–you know you’ve done it too.)
And while I still love microwave popcorn, there’s something about making it on the stovetop that feels better. Like even if I’m having popcorn for a meal, at least it’s popcorn that I actually made myself!
